Never has entertaining been so easy! First, thing’s first: what’s a raclette, you ask?!
The word raclette (from the French racler, or “to scrape”) goes back to the days when Swiss cow herders used to melt raclette cheese on rocks close to glowing coals to scrape over food.
Raclette is a type of cheese from Switzerland, but also a way of eating that is as easy as fondue, if you have the equipment. A Raclette grill features a surface area for heating and even cooking ingredients, as well as numerous small pans for melting the cheese with vegetables and trimmings.

Foodie Pick: First Day of Harvest Arbequina Extra Virgin Olive Oil, 2010

Italian Lentil Soup

Ingredients
2 cups Lentils (French le puy are my favourite, small, nutty and hold their shape)
4 cups Chicken stock or beef stock (preferably homemade)
2 cups Water
2 cloves Garlic; finely chopped
2 cups Tomatoes; crushed
1 tablespoon Olive oil
1 Medium onion; finely chopped
2 tablespoons Parsley; chopped
*2 slices Bacon; choppedDirections
1. Boil lentils chicken stock and water until lentils are cooked but not mushy-approximately 45 minutes
2. While the lentils are cooking, sauté onions and garlic and bacon in olive oil until onions are translucent and bacon is cooked.
3. Add tomatoes and parsley, salt and pepper and simmer for approximately 15 minutes.
4. Once lentils are cooked add tomato sauce and cook 10 minutes more.
5. Pour soup into bowls and sprinkle with Parmigiano-Reggiano cheese
Serves 6*For a non-meat, lower calorie version, substitute a chipotle pepper for the bacon!
